1. Antioxidants

Kale contains lots of antioxidants. Many people know that it is good to get antioxidants without really knowing what they are doing. For those of you who don’t know, an antioxidant is a substance that helps your body protect your cells. In a world where many and more often do not know what they are putting into their bodies and where we constantly hear about how bad air we have, how we poison our nature, it can be good to protect your cells with kale, right?

2. Vitamin C

One of these antioxidants is Vitamin C which helps your body with many important functions. Among other things, vitamin C strengthens your immune system, digestion and helps your body with your collagen production which is important for your bones, skin, and blood vessels. Did you know, for example, that kale contains about 39% more vitamin C than oranges?

3. Vitamin A

Apart from the fact that kale has a high nutritional value for vitamin C, the green vegetable also contains a large amount of beta-carotene. Beta carotene is another antioxidant that can be converted to vitamin A in the body. Besides Vitamin A is good for your eyes, it also helps to improve your skin.

4. Minerals

Kale contains many minerals especially minerals that you may not get in or get in too little of. You will find both calcium and magnesium in a relatively large amount to be a vegetable. In addition, kale also contains potassium. What makes kale a little unique is that, compared to other vegetables, kale contains less of something called oxalate. It is a substance that can prevent minerals from being absorbed by your body. In other words, kale contains more of the good and less of the bad.

5. Kale and diseases

As you notice, there is no discussion that kale is full of substances that are good for you. There is also some research that suggests that certain substances found in kale can also help against serious illnesses. As always, you will find references to the studies we are referring to and as usual it is important to be careful about pulling over large gears. Most studies mean that more research is needed. With that said, there was research on kale and the following diseases:

  • Cancer
  • Diabetes
  • Heart disease
  • Digestion

Kale contains the antioxidants quercetin and kaempferol which have been shown to have an effect on cancer, blood pressure, and heart disease.

An extract of kale along with apple has also been shown to have a blood sugar lowering effect which can be a way to lower blood sugar. Something that many diabetics struggle with.

But it does not end there, as kale also contains lutein and zeaxanthin two substances that have been shown to lower the risk of visual impairment (age changes in the yellow spot) that often affects people over 50 years. In addition, there are studies that show that the substances protect against cataracts.
